    27.5cm x 18cm. vii, 506 pages, 10 plates of chromolithographs, 137 woodcuts in the text. Quarter black leather, paste paper boards, 4 raised bands, gilt lettering, blind rules, gilt decoration, marbled endpapers, all edges marbled. Text is in French.

    Renowned French chef and pastry maker Jules Gouffe (1807-1877) wrote this book, known as The Royal Book of Pastry and Confectionery, thus making his instructions for pastry making available to the public. It is illustrated with 10 plates of chromolithographs of mouth-watering pastries, along with 137 fine woodcuts, some whole page, by E. Ronjat. These show more pastries, along with illustrations of all the processes and equipment needed in pastry making. This copy with an inscription by Gouffe on the half title.

    Cracking to upper joint, 5cm to crown, 1.5cm to tail, still intact. Binding rubbed and chipped. Minor foxing, water stain from page 163 to end, not affecting colour plates. Good Condition.
